This easy Pumpkin Soup recipe is sure to become a fall favorite in your family, even if you don’t like pumpkin like me! I love simple, comforting soups during the cold months and this has very few ingredients and takes very little time or energy to prepare compared to other ‘easy’ pumpkin soup recipes I’ve found.
It comes to you courtesy of someone think so highly of, Catherine Hickem. I actually do not like anything pumpkin, but I love this soup. We’ve made it for a faculty appreciation luncheon for our fabulous teachers at Grace Christian Academy and served it in a fresh baked sourdough bread bowl and it was a BIG hit! Enjoy!
5 Cups Water
8 Chicken Bullion Cubes
Green Onions (3/4 cup)
½ tsp Lemon Pepper
Salt
Pepper
Combine all above ingredientsCook and simmer until onions are tender.
1 Large Can Pumpkin
1 Quart half & half
Add large can pumpkin. Mix on stove. Pour into blender – Clean Pot. Pour back into pot and add 1 quart of ½ & ½ . Simmer on low until heated through.
