It’s a new Meal Plan Monday for the week of August 13, 2012.
Well, it’s official, I’m going gluten free! I’ve been told I do have a gluten allergy and that it’s part of not only my thyroid problem, but will help my overall auto-immune disease.
I’ve always said that if there’s something natural I can do to help my body, I’d do it. So even though I went gluten free when I was diagnosed with Chronic Fatigue Syndrome about 15 years ago, I went back to ‘regular’ eating after I started feeling better. Truth be told, I was in some of the best shape of my life after I started eating that way (I even competed in the Miss North Carolina USA pageant 3 months afterwards!).
But that was as a single girl, when it was much easier to cook for one! Now as a wife and mother, the thought of cooking and eating entirely gluten free seems to be a little more challenging.
That’s why I’m thankful that eMeals now has a gluten-free meal plan to help me out! I’m going to try to be eating as ‘clean’ as possible for now – lots of veggies, protein & nuts – to help get ‘back to basics’. So I apologize if this isn’t as exciting for you all 😉 I may throw in a few favorite Cone meals here and there for your sake, even if we can’t eat them right now!
I’ve also set up a standard breakfast schedule for our family – that way the kids and I know exactly what they’ll be eating for breakfast each day of the week and can be better helpers to me! We’ve been doing it that way for a week and it’s amazing how it’s already streamlined getting ready for school.
