Need a great idea for dinner tonight? I have something that’s easy to make and delicious…

I recently made the most delicious crockpot beef stew. The original recipe came from The Daniel Plan by Rick Warren and I tweaked it just a bit to fit our family’s needs. Not only is it healthy, I was surprised at just how little effort it took to put together.

What you want to do is get a little over a pound of stew meat, coat it in cornstarch and then brown it in a little oil with one red onion that’s been thinly chopped. To that, you’re going to add 3 cups of beef stock, a good squeeze of tomato paste and a couple splashes of worcestershire sauce, along with some salt, pepper and a bay leaf. Simmer the mixture for a few minutes, then transfer to a crockpot with 2 carrots and 2 potatoes that have been diced.

Cook on low for 4-6 hours and enjoy! For even less clean up, don’t forget to use a crock-pot liner too.
