This is another recipe I can’t stand the name of (hence why I’ve had to rename it “Baked Corn”), but since marrying into the Cone family, it’s become one of my favorite holiday side dishes!
Recipe courtesy of Anita Cone
2 cups corn
4 eggs
3 T flour
1 1/2 t salt
2T sugar
1 3/4 C milk
1/2 C butter
Mix eggs, flour, salt, sugar and corn in a blender at med. speed until corn is cut up. Stir in milk.
Grease casserole dish. Cut remaining butter into pieces and place in bottom of casserole dish.
Pour corn mixture over butter pieces.
Bake at 325 degrees for 15 minutes. Stir well. Continue for 30 minutes (6-8 servings)
