They were so intrigued by the Buffalo Chicken Chimichangas the saw on my meal plan that they asked me to come and demonstrate how I make my Mexican food magic.
I wish I could take credit for this creation, but I owe it all to Publix. This recipe is one of their fabulous Publix Apron’s Simple Meals. You will however see me add a few of my own twists and favorite side dishes from my time living in the Baja Peninsula of Mexico (back when I used to be a tennis pro & my body still worked…can I get an Amen?). I LOVE chimichangas, but I never order them because they’re deep fried. While I wouldn’t go around and call this healthy, this recipe is a great alternative to the restaurant version.
What? You’ve never heard of Publix Apron’s Simple Meals? Not only are there free recipe cards in the front of every Publix, but most also have demonstration kitchens where they’ll cook the week’s featured meal in front of you and even hand out samples.
I have to give a special shout out to Stacy, Michelle and the fabulous team over at the Publix on Hwy 100 in Bellevue. I go out of my way to shop at this particular store because their customer service is second to none. Not only do they keep the store in meticulous shape, but that’s secondary to the feeling you’ll get when you walk in there. Everyone from the customer service staff to the baggers make me feel like a million bucks every time I walk in there. I literally cannot pass by any staff member without them offering a smile my way and asking if I need help finding anything. If you’ve ever had a negative shopping experience or just haven’t found a grocery store to call home yet, go visit the great folks at the Hwy 100 Publix and they will make you forget all your shopping troubles J

Did I see something on your show about a “provolone wrap and roll” cheese? I did not get the brand name and would like to try it if I have the right show. Thanks, Rebeccs
