I know, I know, I’m posting my April 5th Meal Plan on April 7th…better late than never, right?

We’re trying to eat more simply these days, both for health and budget, so I’m trying a few new twists on some basics.

Week of 4/5 BREAKFAST LUNCH DINNER
Monday Cereal & Fruit Chicken Salad with crackers Pizza Night
Tuesday Fruit Oatmeal Mixed greens with Craisins, goat cheese and walnuts Chinese Chicken over rice with vegetables
Wednesday Cereal Ham & Cheese roll ups Homemade Chicken Noodle Soup with biscuits
Thursday Greek yogurt with crushed almonds & honey Gyros on pita with hummus Taco Bar
Friday Hard Boiled Egg and blueberries PB&J on Rice Cakes Romano Crusted Chicken over angel hair pasta
Saturday Crepes Quesadillas Bacon Cheddar Quiche with Potato crust
