It’s time again for Monday’s Meal Plan: May 23 edition!
What did you guys think of last week’s meal plan? I’d love to hear your feedback on what works for you and what doesn’t each week.
My most exciting discovery was when I made my version of the chicken and bacon pasta. After eating (& loving!) the Chicken Farfalle at Maggiano’s this month, I learned they used a paremesan stock as their base (made from Paremsan rinds). So when I saw Paremesan rinds at the Whole Foods closing sale last week, I snatched them up. I just threw them in stock pot full of water with some salt, pepper, asparagus stalks (left over from my Quinoa Salad you’ll find on this week’s plan) and an onion….you will not believe the aroma that comes from your kitchen if you try this!
Anyway, I just added a couple cups of the stock to my cooked chicken, bacon and garlic before adding the cooked pasta to my pot and VOILA! Super delicious and light. Finish it off with some grated cheese and you’ll be in heaven.
Of course, with summer and Memorial Day upon us, grilling is inevitable. Even if you don’t own a grill, you may want to look into getting a grill pan for your stove top or an electrical grill…heck, even a George Foreman will do the trick while cutting out fat and adding a bunch of flavor!
