Cone’s Meal Plan: 3/29

So, what’s cookin’ in the Cone Home this week?

Let me tell you – I had an “A-ha” moment at Apples of Gold last week. You would think that as a former tennis pro, pageant winner and Chronic Fatigue Syndrome survivor, I would have this nutrition thing figured out by now! But alas, how easy it is to slip into bad habits when you don’t feel sick anymore.

A nutritionist came to pour knowledge into us and for whatever reason, it made me wake up. We eat pretty healthy most of the time, but as a lover of freebies, I’ll allow myself some slip-ups if it helps my budget. Well, no more. I won’t go into too many details here, but stay tuned as I’m looking to partner with those who know more than I do to bring you the education on healthy eating that both you and I so desperately need!

I am trying to implement a few things this week – like eating more eggs and incorporating more healthy proteins into my diet, especially for snacks. I can’t wait to bring you all along on this journey with me!!!

What's Cookin': 11/23

Yeah! It’s Thanksgiving week! What a wonderful time of year this is. I am truly blessed to be in such a beautiful city with my family and I plan on counting ALL my blessings as we celebrate Thanksgiving in a new home and a new city this year.

The menu plan isn’t too innovative this week as I’m trying to once again eat out of our freezer and our stockpile to prepare room for later in the week. While I plan on doing a post later on what our Thanksgiving dinner will consist of, I can tell you that as of my conversation with my husband last night, his wish list is as follows:
Turkey (I know, shocker…I can see you’re riveted to learn more!), gravy, dressing, baked corn, garlic green beans, mashed potatoes,  roasted parsnips & carrots, hash brown casserole, mac & cheese, cranberry salad, rolls, greens, deviled eggs, lima beans, pea salad and of course, lots of pie!

There are 2 major concerns I have with this “wish list”:
1. I don’t eat or know how to make half of those items
2. There are only 4 of us, with only 2 others who have confirmed that hey are joining us thus far, so I think I’d need to invite about 23 others if we hoped to eat all that food!

I LOVE Greek yogurt. In fact, I often joked with my family growing up that they could ship me to Greece and leave me there for awhile and I’d be perfectly content icon smile Free Oikos Yogurt Not only is Greek Yogurt fantastically creamy and delicious, but it makes a very healthy base for dips (instead of mayonnaise or sour cream).

This weekend I grabbed a TON of Oikos Yogurt for FREE at Whole Foods! It’s on sale for $2 each, and I used a $1 off coupon found in the 9/27 SS and paired it with a $1 off Oikos coupon from the sale flyer found at the front of Whole Foods.r

I personally love the plain version drizzled with honey, but they also make great flavored versions as well. Opa!
