When I did our weekly shopping trip last week, our basket consisted mostly of fresh fruits and veggies, some deli meats and cheese for the kids lunches (salads and homemade lunchables) and some canned goods for chili, soup and crockpot meals.

 

I was inspired by some family favorites, as well as our weekly Paleo Meal Plan that we get from eMeals; even when the recipes aren’t exactly what I’d serve, they always provide great inspiration! monday meal plan 300x153 Free Weekly Meal Plan: The Stay Home Simple MenuMy free weekly Meal Plan is making its 2013 debut with something I’m calling the “Stay Home Simple Menu”.

We’ve been gone on our Disney Cruise this past week and as much as we love being a family on the go, the trick to keeping up that kind of lifestyle is knowing when to simply stay at home.

When you consider that we’ve been eating a much heavier menu than we’re used to on the cruise, our plan for this week was simple: stay home and eat simply.

When I did our weekly shopping trip last week, our basket consisted mostly of fresh fruits and veggies, some deli meats and cheese for the kids lunches (salads and homemade lunchables) and some canned goods for chili, soup and crockpot meals.

Total cost for the week? $63.

Keep in mind, I surveyed what we already had in our freezer and worked that in to our weekly menu. I’m also taking into consideration the meat we still have in our freezer from our local CSA.

I know, I know… I left you hanging last week, and I’m sorry.

While we’re on the subject, I have to confess, I fell of the Paleo wagon last week! I can’t really blame it on traveling, because I’ve traveled since eating Paleo, but I’ll blame it on the good food at Gaylord Opryland resort since we were there to kick off the holiday season!

It wasn’t a bad fall, but I think I failed in not being better prepared and getting caught up in all the Christmas festivities!

But this week I’m ready to jump back on the wagon, at least for the beginning of the week icon wink Free Weekly Holiday Meal Plan: November 19, 2012 We’re celebrating Thanksgiving with just our family tonight with a Family Meal for 4 from Whole Foods Market (thanks to our friends at the Green Hills/Nashville location!) and then on Wednesday night we’re making an impromptu drive up to Kentucky to spend Thanksgiving in a central location with some of Ricky’s cousins and our Aunt Brenda, so we’re excited about that.

monday meal plan 300x153 eMeals Free Paleo Meal Plan: October 2012Well, it’s not Monday, and I don’t even have a full Meal Plan for you today, but I realized I haven’t posted a meal plan for all of October and felt like you deserved an explanation why.

I know I also haven’t given you a health update in awhile (remind me to do that later too), but I’m officially off of my thyroid medication now! That’s in large part thanks to Dr. Jana and Dr. Maxfield at the Middle Tennessee Center for Alternative Medicine…and thanks to them, I’ve come to understand better what fuels my body and what crashes my body.

In an effort to detox, and in order to avoid the negative triggers of gluten & dairy, they’ve suggested a 6 week detox which basically left me eating nuts, protein and vegetables. As I did more and more research on what I could eat, I realized this pretty much lined up with a Paleo diet.

I haven’t been posting meal plans because I honestly haven’t figured out how to make this work for my whole family yet. But just as I’ve been learning more and more about Paleo eating, I discovered my friends at eMeals‘ had jumped on the Paleo bandwagon and are now offering a Paleo Meal Plan too!

Meal Plan Monday: September 3, 2012

monday meal plan 300x153 Meal Plan Monday: September 3, 2012Happy Labor Day! Here is my new Meal Plan Monday for the week of September 3, 2012.

Though many of you may be grilling out today, we’re finally headed back to Nashville after spending the week in Florida remembering my Father in Law.

That being said, I honestly haven’t given a lot of thought to what we’ll be eating this week.

What I do know is that I went off my gluten free/dairy free meal plan for a day this week and boy, did I pay for it! (but you should have seen the dishes we were being blessed with by the neighbors!).

So even though we’re traveling, I want to re-focus and get back on track.

Since I’m still figuring out exactly what this means for my eating, I haven’t switched my family over completely yet, but as I learn more I hope to start making gradual changes…and of course will be sharing those decisions with you!

Remember, we also started a standard breakfast schedule for our family – that way the kids and I know exactly what they’ll be eating for breakfast each day of the week and can be better helpers to me! Sometimes I’ll cook pancakes & waffles in big batches on the weekends so I have them on hand during the week, but Trader Joe’s also makes extremely tasty (and reasonably priced!) gluten-free & dairy-free waffles and pancakes that the kids think are the “best in the world”!

Meal Plan Monday: August 13, 2012

Well, it’s official, I’m going gluten free! I’ve been told I do have a gluten allergy and that it’s part of not only my thyroid problem, but will help my overall auto-immune disease.

I’ve always said that if there’s something natural I can do to help my body, I’d do it. So even though I went gluten free when I was diagnosed with Chronic Fatigue Syndrome about 15 years ago, I went back to ‘regular’ eating after I started feeling better. Truth be told, I was in some of the best shape of my life after I started eating that way (I even competed in the Miss North Carolina USA pageant 3 months afterwards!).

But that was as a single girl, when it was much easier to cook for one! Now as a wife and mother, the thought of cooking and eating entirely gluten free seems to be a little more challenging.

That’s why I’m thankful that eMeals now has a gluten-free meal plan to help me out! I’m going to try to be eating as ‘clean’ as possible for now – lots of veggies, protein & nuts – to help get ‘back to basics’. In the past week, we’ve celebrated two family birthdays and our wedding anniversary, so I am more than ready to get back on track when it comes to our eating.

I’ve also been told I need to go gluten-free (more on that later), but until I can really get more information on how that will affect me and how I cook for my entire family, I’m not going to alter my meal plan accordingly. Of course, we have been avoiding bread and pasta for some time, but nothing hard and fast. However, if any of you have gone gluten free with your kids, I’d love to hear your feedback and suggestions!
